Ⓥ Vegan Kitchen: Tofu Balls Ⓥ


These are so absolutely ridiculously delicious! I've brought these to potlucks before and people just eat them right up, even the avid meat-eaters and tofu-weary folk! It is a fairly simple recipe, easy to make and only takes about 30 minutes total. They go great in spaghetti sauce, as a side dish, in subs and wraps, or as a great "turkey" replacement for all of those big festive dinners (like Christmas, Thanksgiving, and so on)--drizzle some vegan gravy over top and I'm in complete heaven!   

I snagged this recipe up from "La Dolce Vegan" cookbook and changed a few little things to my liking. So if you fall in love with this recipe, I highly recommend that you go pick yourself up their cookbooks, like immediately! ;) 


Tofu Balls:

1 cup Tofu (best if its firm but I often use regular and it works just as good), mashed or crumbled
1/2 cup Rice Flour (or other flour)
2 tbsp Tahini (or nut butter)
3 tbsp Tamari
1/8 cup Parsley
1/2 tsp dry Mustard
1/4 tsp ground Black Pepper
1/4 cup flour for coating
2 tbsp Olive Oil


In a large bowl, stir together the tofu, 1/2 cup flour, tahini, tamari, parsley, mustard, and pepper. Place 1/4 cup of flour onto a plate and roll 1/2 tbsp of tofu mixture into a ball and coat with the flour. In a frying pan on medium heat, fry tofu balls in oil until browned all over. Makes approx. 10-14 balls.

Ⓥ Vegan Kitchen: Vegan French Toast! Ⓥ




Before I was Vegan, I used to love real french toast so I was super happy to have found this recipe as a replacement. I actually prefer this recipe way more than regular french-toast, it's simply perfect! 


This yummy recipe is based off of the lovely Vegan Cook book by Sarah Kramer "La Dolce Vegan!: Vegan Livin' Made Easy" which I highly encourage you all to pick up. Even if you're not vegan, the recipes are amazing and, who knows, it may encourage you to eat more vegan meals too ;)

This recipe is for 2-3 servings, 4-6 slices of bread.
This recipe is best with stale bread or if you lightly toast it before cooking. Make this gluten-free by using gluten-free bread. I used Food for Life's Brown Rice Bread and the recipe actually turned out way better than when I'd used other breads a couple years ago. Who knew? :)   


Vegan French Toast:

3/4 cup Soft Tofu. 
2 Tbsp Agave Nectar (or syrup sweetener of your choice)
3/4 tsp ground cinnamon
1/2 tsp vanilla extract
1/4 tsp salt
1/4 cup apple juice
1 tbsp oil
4-6 slices of bread

In a food processor or blender, blend the tofu, agave nectar, cinnamon, vanilla, salt, apple juice, and oil until super smooth. Pour the batter into a shallow bowl and dip the bread slices into the batter so that both sides are fully coated. Don't worry if there seems to be an excess of batter, just lather up those bread slices even if it looks kinda sloppy. Fry the bread in a hot non-stick or lightly oiled frying pan and cover. Let sit on medium heat until the underside has browned. Flip and repeat.

♥ Wednesday Favorites: Vegan CookBooks ♥

Since it is "World Go Vegan" week and all, I thought I should take this opportunity to share with you my favorite Cookbooks in the whole wide world. ^_^

"La Dolce Vegan" and "How it all Vegan" 

They are Amaaaaazing cookbooks with so many incredibly delicious recipes that everyone can love! There's tons of variety, and some take some time while other recipes can be whipped up in a flash. A perfect example of how being Vegan kicks ass and we have just as much yummy, no yummier, foods to eat as the carnivores out there do. 

The book(s) are written by Sarah Kramer and Tanya Barnard (except for La Dolce Vegan) who both just so happen to be Canadian girls as well ^_^. They are Two fun and sassy, punky girls that make the recipes fun to even read, plus the books are so much fun with a retro 1950s feel throughout. You can check out more about them, the books, and more Vegan goodness on the website... 


So what are some of my favorite recipes from the book? 

In  in "La Dolce Vegan"....
The Red Lentil Pasta, Black Bean & Sweet Potato Burritos, Spaghetti and Tofu Balls, Raspberry Apple Crumble Pie, Chocolate Puddin' Cake, and...well I could keep going, there are just so many good ones, but we'll leave it at that and the rest you can explore for yourselves. ;) 

I only just got "How it all Vegan" so I have yet to share favorites, but it is their first Cookbook so I am excited to try out new recipes seeings as I love the other one so much. And I'll be sure to share some of my favorites as I discover them ^_^.

These books truly make being Vegan eeeeeaaaaasy! So if you want to change your life and help those suffering animals, I highly recommend picking up these cookbooks! Being Vegan has never been easier!
